Baked Ziti with Broccoli and Cheese
As most of you know, my mom was diagnosed with colon cancer. She has been undergoing treatment for it, and it seems to be going well so far. But she will be undergoing some more testing after this weekend. My husband and I are continuing to keep her in our thoughts and prayers, and we will be there with her and my dad for her colonoscopy on Saturday. It’s still a little surreal to have her under the care of doctors, and while she has been doing a lot better since she started her treatment, I really don’t know what to expect when we head to the hospital this weekend.
However, in the meantime, I thought I would share one of her many recipes with you, in the hopes that it will help you when you are wondering what to make for dinner tonight! You know, there are always so many great ideas that I have to put on the back burner because I am so busy with work and our boys. But this ziti and broccoli and cheese casserole is one of my favorites. It’s simple and delicious!
The original recipe I received from my mom called for a jar of Muir Glen soup mix. I, however, did not have any, and I thought I would like to substitute the zucchini with broccoli instead. The result was DELICIOUS!! I love that even though the zucchini is not exactly the same, it still tastes like it does, and it was much easier to cook. I added some shredded mozzarella cheese at the end, but my mom does not eat cheese, so I think it would be good with some feta or herbed goat cheese as well.
I have not seen your Mom since she was in Naples. My thoughts and prayers are with you and your family. God bless your Mom for giving us such a wonderful recipe. A memory to take along to Hospice. I know it helped me in my difficult time.
Love it! This is the kind of recipe I love to have in the freezer. Any cheese can be substituted for any other and it’s easy to add a few extra veggies. I have added lots of veggies as well as different types of beans, but you can also just use the broccoli and cheddar mix. Thanks for sharing
